Spinach & Pepper Jack Stuffed Pork Chops

We absolutely loved this recipe. I rolled mine, but you can fillet them and leave three sides on like a "pocket"and stuff them that way as well. I did not have that option as I took mine off of the bone and they were pretty small. The cheese would stay in much better if you fillet a "pocket"into your chops.

Ingredients:

4 Pork Chops
2 Cups Fresh Spinach
2-4 oz Pepper Jack Cheese
1 Egg- Beaten
1 Container French's French Fried Onions-crushed
Season to taste.
*I rubbed mine down with barbecue maple rub before stuffing*

Directions:

Preheat oven to 400.
On a cutting board, fillet your pork chops. Cut a "pocket" to stuff or fillet all the way to one end for the roll. Place your spinach on/in the pork chop first. Then crumble your pepper jack and add that. If you made the pocket cut, you can try covering the opening with a bit more spinach to keep the cheese in better as it cooks. Roll your pork chop if you cut it the long way.

Dip each stuffed pork chop into your egg and fully cover with your fried onion crumbles and place on a sprayed/greased baking sheet.
Bake in the oven for 30-35 minutes.

** Keep in mind, you can coat these with any kind of breading you choose and also switch out the cheese for your favorite kind as well! I'm just super duper obsessed with french fried onions.
YUMM-alicious!
Serve hot and enjoy!

Slimming Green Tea Smoothie

Yummalicious!!! I could honestly drink smoothies all day, every day. I usually replace one meal a day with a protein and vitamin packed cup of deliciousness. Today it was this this Green Tea Smoothie for breakfast. I add spinach in every single smoothie I make because I don't cook it often, and frankly, my husband isn't super crazy about it. Here's how to make it!

1 fresh or frozen Banana
1 Cup fresh strong brewed Green Tea
2 Cups Fresh Spinach
1/2 C Oats
2 Tbsp flaxseeds
Sweetener (optional)

Now this may sound a little nuts, but I also add a 1/2 tbsp of apple cider vinegar into my smoothies. It does your body good, honestly, google it! You don't have to add it, it changes the flavor ever so slightly, but I enjoy the benefits of it. I do not add sweetener myself, but this isn't the sweetest smoothie. You can add other fresh berries for added sweetness as well. Green Tea is believed to help slim you down, as is the apple cider vinegar. They are both good for boosting energy as well. ***Please use decaf for children, and those prone to the extreme jitters after one cup of tea like my sister!***

Hope you enjoy!

Slimming Lunch Smoothies

I SWEAR by these. I make one in place of one meal every day. Usually its easiest for me to make it at lunch. I have been drinking a smoothie a day for about two weeks now and can already tell a difference in many ways. It revs up my energy levels, I have lost four pounds (most around my "muffin top"), my hair seems flawlessly healthier and my body feels healthier too. I have never stuck to any kind of "diet" in my life because, well, I hate them. I am STILL not sick of these.

I buy the frozen unsweetened fruit. (blackberries, blueberries, strawberries, raspberries) This can look a bit pricey, about 10.00 a bag, but when you think about it, its lunch for a week. Not too bad. Bananas I like fresh. Strawberries, when in season, are also much better fresh.

Recipe:

3 tbsp ground flaxseed
3 tbsp oats
1 C. Plain nonfat yogurt (can use greek)
1/2 C. Blueberries
1/2 C. Blackberries
1/2 C Raspberries
2 C. Fresh Spinach (grinds down to nothing)
1 Banana
1/2 Fresh Avocado
1/2 C Fruit juice/Milk/Water

Add any fresh ingredients first, then add frozen. Add some juice, water or milk to thin it out a little.  Add one or two ice cubes on top. If using all fresh ingredients, add a bit more ice. No one wants a warm smoothie. These are very easy and you can use whatever fruit you like. Add whatever veggies you want. I use flaxseed in mine because its packed with fiber and nutrients you need. Yogurt is good for your gut, so I toss some of that in there too. The oatmeal maintains my hunger longer.
Enjoy! I am enjoying mine right now! :-)
